Oolongs of China and Taiwan
In this class, we will explore the two main classes of oolong tea, as well as the two main countries that produce the best oolongs in the world.
In this class, I will give a short history of the production of oolong tea in China and Taiwan. I will also explain the processing of oolong tea in China and Taiwan and explore the differences in processing methods between the two countries. We will get the chance to taste three oolongs from China and three oolongs from Taiwan. I will ask each person which country produces tea more to their liking, and which tea was their overall favorite. I will also ask if any of the teas we tasted brought to mind any scents, images or memories to the forefront of each person's mind.
